Easy 30 minute Gnocchi

For those nights, when you do not feel like cooking for long time or something you could just whip up with very few ingredients, gnocchi is your best bet. This is a fun and easy recipe you could make on your date nights or with your kids. I hope you enjoy making it as much as I did.

Gnocchi:

Ingredients:


  • Potatoes - 400 g

  • Plain flour - 50 g

  • Parmesan cheese - 50 g

  • Red pepper flakes as desired

  • Olive oil

  • Salt as desired


Instructions:


  1. Chop the potatoes into chunks and cook in a pot of salted boiling water for 13 minutes or until soft.

  2. Remove the potatoes and dry for couple of minutes.

  3. Mash the potatoes well and add desired amount of salt.

  4. Add the flour to the mashed potatoes and mix well. Divide the potatoes to even pieces.

  5. Keep a pot filled with water on high heat and bring the water to boil.

  6. Use a fork and shape the gnocchi to desired shape or use you palm to shape into uneven gnocchi to provide a simple look.

  7. Drop the gnocchi to boiling water for 1 minute or until they float.

  8. Bring a non stick pan to medium-low heat and add 1 tablespoon of olive oil.

  9. Toss the cooked gnocchi to the non-stick pan and grate 3/4 of the parmesan to the cooked gnocchi. Toss it gently.

  10. Season to your taste. Sprinkle some dry red chili flakes for that spicy kick.

  11. Plate up with little drizzle of olive oil and remaining parmesan.

  12. Enjoy!
